On July 12, 2019, Le Mary Lili opened its doors on Rue de la Chaîne, in the lively historic nightlife district of La Rochelle. In an urban, neo-industrial setting, this cocktail bar was the first of its kind in the city, nspired by the authentic tradition of New York bars, while preserving the spirit of the maritime city.
Le Mary Lili is a place for life, sharing, encounters, and joy, offering a warm and festive atmosphere to all who love to savor the art of taste. Our mixologist creates unique cocktails crafted with homemade syrups and fresh ingredients. The spirits are selected for their flavor profiles, with a preference for French and local products whenever possible. Our menu is constantly evolving, changing with the seasons and the new flavors we wish to share with you.

NICOLAS ROYER
A sixth-generation member of the Cognac house Louis Royer, Nicolas has been immersed in the world of spirits since childhood and in mixology for over a decade.
Initially focused on tourism, communication, and event management within the Excelia Group, he became a brand ambassador for the family’s cognac house in the United States in 2014.
Since returning to France in 2018, he has sought to bring together what once stood apart, combining events, tourism, and spirits at the heart of the Mary Lili project.

NICOLAS MARIA
After completing an MBA in Tourism Management at the Excelia Group, Nicolas discovered the world of cocktails and its incredible diversity during a stay in the United States in 2015.
Upon returning to France, he decided to dive into this new industry by completing a CQP Barman – Nightlife certification through an apprenticeship at the renowned Le Syndicat, a flagship of the Parisian cocktail scene.
Together with his partner Nicolas R., he went on to found Le Mary Lili on July 12, 2019.

Bartender
GABRIEL DEBERNE
Gabriel has a passion for creating and discovering new flavors.
After earning a vocational diploma in culinary arts, followed by a professional diploma in service from the Quercy-Périgord Hotel School, he continued his studies with a professional bartender certificate at the La Rochelle Lycée Hôtelier which he successfully completed through his apprenticeship at Le Mary Lili, begun in September 2022.
Now a full-time team member, Gabriel is one of the key contributors to the creation of your cocktails.

Bartender
JANE FOSTER
Jane began her career as a head barmaid in Perth, Australia.
Quickly developing a passion for creating cocktails with homemade ingredients, she draws inspiration from her Filipino heritage to craft unique flavors rarely found in Europe. Eager to refine her mixology skills and define her own style in the cocktail world, she first made a name for herself at Iséo and then at Le Cadre in La Rochelle, before joining and enriching our team.
